Gluten Free Pizza in Humboldt

My family loves Paul's Live From New York Pizza.  They have awesome by the slice pizza so that everyone can have exactly what they want.  The Sunset, the Godfather, and the Olive Special are just a few of our favorites.  The BEST part is that you can order any of these with a gluten free crust!  You have to order a whole small pizza for the gluten free option, but hey, who doesn't love let over pizza for breakfast?  Paul's Live From New York can be found in Arcata, McKinleyville, and Eureka.

3 Weeks- No Gluten, No Asthma

It has been 3 weeks since I started eating gluten free.  Six weeks ago I was in no way understanding the people looking for gluten free buns at the snack shack or those excited about the gluten free pancakes and toast at my work.  I did not get what the big deal was.  I figured eating gluten free was a choice.  I really did not understand it.  I get it now.  I got it on the 4th day of eating gluten free.  That is when my asthma started to go away.  That was the first day in 28 years that I felt like I could breath without struggling or having an asthma attack, other than when I was on medications.

Since then I have stuck to my gluten free diet.  I have given up wheat, rye, and barley in many forms.  Honestly, you never knew how much gluten was in your diet until you started shopping in stores and restaurants for food with out it.  I feel so good physically that I don't let it get me down, I just eat someething else.  What do I miss?  Beer!  The gf ones are horrible.  I miss pizza crust!  But I will try using Bob's Red Mill Gluten Free Pizza Crust Mix soon for our homemade summer pizzas.  Little by little my family is going to be eating mostly gf at home.  So far they don't mind.  They can see how much better I feel and breath!

As I said, I quit eating wheat, barely, and rye (I do miss rye bread).  But I have not completely cut out things like vinegar and flavorings.  Although, I am working hard to do without whenever possible.  I did it because a friend told me one of her sons was put on a gluten free diet for a couple of reasons and not only did it "cure" the concerns they had with him, but his asthma also went away!  It worked for me too and I can't believe how good I feel!  I can't believe all the different reasons that people cut gluten out of their diets!

Why I Am Gluten Free!!!


I am almost 40 years old.  I have had asthma since I was 11.  It started as exercise induced asthma and soon became asthma realted to allergies as well.  Over the years I have had my ups and downs with it.  I have mostly relied on rescue inhalers-ventolin, proventol, pro-air, etc.  About 10ish years ago I tried acupuncture, relaxed me, but did not help with asthma.  I've tried honey, benedryl, nettles, etc., etc.

About 7 years ago, a doctor told me that I would die of a heart attack at an early age if I kept on with my rescue inhalers as I was using them.  He recommended Singulair, which I loved!  Made me feel like I could breath again for the first time in 20 years, but it is about $160.00 per month, and I can not always afford it.

I do not like steroids, try not to take them at all.  Although I have been on prednisone 3 times in the last year because my asthma has been so bad.

I have a nebulizer at home and use it regularly.

A few weeks ago, I was talking to another mom at the ball field.  She was telling me about her middle child who was diagnosed last year as having a reaction to gluten.  She told me about his special diet, what he eats, what he can't eat, etc.  She said the change in him was quick.  Mood swings- gone.  Swollen belly- gone.  Lack of focus in the classroom- gone.  Asthma- gone.

Wait!  What?!  his asthma went away?  Yes, completely!!!

Since then I have talked to many people about their gluten free diets.  Why they do them, how they feel, etc.  I have researched the negative affects on gluten in our diets online.  I also listened to a local news program on the radio that talked about our food supply.  Interestingly enough, it seems you can trace the spike in many diseases, such as asthma, back to when they started saturating our food supply with gluten.

I decided to give it a try.  I figured I would do it for a week and if nothing changed, I would reassess my diet in a week.

Please keep in mind that I do not eat great, but I try to make my families meals from scratch and eat very little processed food anyway.

After 4 days, I was hooked!  I am now 9 days gluten free.  My asthma is not completely gone, but it has drastically improved!
  I will not be buying anymore Singulair.
  I can walk for exercise without having an asthma attack.
  I can walk upstairs and not have asthma.
  I have so much energy, I almost feel high!
  My body hearts less than normal.
  I miss the hell out of my Sierra Nevada beers, but feeling so good is well worth the sacrifice!
  I also have not had any low blood sugar spikes like i usually have.
  I eat because I am hungry, not because my blood sugar is dropping or I am tired!
  Completely life changing!  Not too hard to do.  Well worth the effort!

  If you or someone you know has asthma, I highly suggest trying a diet that does not contain gluten!  Truly amazing!  And not one doctor in almost 30 years has ever suggested that I try cutting out gluten!!!
